FYI, The Paleo Kitchen cookbook has a mayo recipe that is SOOOO much easier…you take 3/4 cut oil of your choice, 1 egg, lemon juice(1 tsp I think), and 1 Tbsp Dijon mustard, place them in a tall, narrow container, and use an immersion blender! Start at the bottom and move the blender upward as the ingredients emulsify. I had quit making my own mayo because the other way was SO time consuming and mine never seemed to come out right, but this version is pretty fool-proof! I use grapeseed oil because the olive oil is a bit bitter for me.

I had never heard of the Paleo diet before I read this book but as a Mexican Cookbook it is really good. There are the recipes you would expect to see - empanadas, enchiladas, fajitas and such plus many recipes I have never seen before. There are lots of yummy looking recipes that I will be trying out. I am especially looking forward to trying the Salted Chocolate Ganache Tarts!

Shepherd’s pie is a popular dish in the UK, but not so much in the States. It’s a shame because it’s very delicious, but it is also made with a lot of ingredients that aren’t necessarily Paleo if it’s made the traditional way. This recipe makes plenty of adjustments so that a Paleo eater can enjoy comforting food. For starters they’ve gotten rid of white potatoes that play such a big role, and replace them with sweet potatoes which are a recommended Paleo food because they are loaded with antioxidants and fiber. I have looked through many Paleo cookbooks and this one has become my favorite! Many paleo cook book recipes use a lot of expensive ingredients and are time consuming. This book os not like that. I have tried many of the recipes and they are delicious! Sometimes I do not have much time to spend in the kitchen and this book provides recipes for those who live very busy lives. I highly recommend this book!
